- 3/4 to 1 pound ground beef or turkey
- 1 small onion, chopped
- Salt and pepper to taste
- 1 package (16 ounces) frozen Tater Tots

Directions

Ingredients
- 4 salmon fillets;
- salt, ground black pepper — to taste;
- 2 tablespoons olive oil;
- ¼ glass of white wine;
- 1½ lemons;
- 2 garlic cloves;
- a pinch of red pepper;

Preparation
Place a large frying pan over medium heat, heat the oil and place the fillets skin side up. Season with salt and pepper. Fry until golden, then flip.
Add wine, juice of 1 lemon, minced garlic and red pepper. Bring to a boil, pouring the sauce over the fillets.
When the salmon has darkened, take it out. Melt the butter in a frying pan and add the juice of ½ lemon. Mix well. The sauce should cook until it thickens. This will take approximately 2 minutes.
Pour sauce over fish, garnish with dill and lemon slices.

2. Mozzarella omelet

Preparation time: 10 minutes.
Ingredients
- 350 g ripe tomatoes of various colors;
- 2 tablespoons olive oil;
- red wine vinegar, salt, ground black pepper — to taste;
- 15 g fresh basil;
- ½–1 fresh red chili;
- 100 g mozzarella;
- 4 large chicken eggs.
Preparation
Slice the tomatoes and season with ¹⁄₂ tablespoon olive oil, red wine vinegar, salt and pepper.
Mash most of the basil leaves with a pinch of salt to a pulp and mix with 1 tablespoon of olive oil. Then finely chop the chili and mozzarella.
Heat ½ tablespoon olive oil in a large skillet. Beat and pour in the eggs, stir them, but do not bring to readiness. Place the cheese in the center of the pan and drizzle with the oil and basil mixture. Let the dish cool down a bit.
After one minute, carefully fold the omelette in half and place on top of the tomatoes. Cut it down the center, opening the mozzarella. Add the chilli and garnish the dish with the remaining basil leaves.

3. Fried mackerel with tomato mix and quinoa

Preparation time: 15 minutes.
Ingredients
- 300 g quinoa;
- salt to taste;
- ½ lemon;
- 4 mackerels, gutted;
- ground black pepper — to taste;
- 1 teaspoon ground coriander;
- 3 tablespoons olive oil;
- 2 sprigs fresh rosemary;
- 2 garlic cloves;
- 800 g tomatoes, assorted colors;
- 1 fresh red chilli;
- 1 tablespoon balsamic vinegar;
- 2 tablespoons fat-free yogurt;
- 2 teaspoons (heaped) grated horseradish;
- a pair of sprigs of fresh basil.
Preparation
Boil 2 cups of water and throw in the quinoa. Add a pinch of salt and half a lemon, cover. Cook until tender, stirring occasionally.
Cut each mackerel crosswise on both sides, leaving about 2 cm to the bone. Rub with salt, black pepper and ground coriander.
Then place the carcasses in a large skillet with 1 tablespoon olive oil heated over medium heat. Sprinkle the fish with rosemary and minced garlic cloves and fry on both sides until golden brown.
Slice the tomatoes and place them on a wide dish. Throw chopped chili peppers on top. Squeeze out the finished quinoa and add to the center. Drizzle with 2 tablespoons olive oil and 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Place the fried mackerel on top of the salad.
Mix yogurt and horseradish and pour over the fish. Garnish the dish with basil leaves.

Tomato Cheeseburger

Ingredients
- 1 tablespoon olive oil;
- 1 medium onion;
- 2 garlic cloves;
- 450 g ground beef;
- 1 tablespoon ketchup;
- 1 tablespoon mustard;
- salt, ground black pepper — to taste;
- 4 fresh tomatoes;
- ⅔ cup grated cheddar;
- bunch of lettuce;
- 4 pickled cucumber slices;
- sesame seeds.
Preparation
Heat oil over medium heat, fry the onion in it until soft. Put the minced garlic and ground beef into the pan. Let the meat brown and drain off the fat. Add ketchup, mustard, salt and pepper.

Ingredients
- 1 red bell pepper;
- 1 bunch green onions;
- 1 tablespoon vegetable oil;
- 2 garlic cloves;
- 1 tablespoon chili powder;

- 450 g tomatoes;
- 1 cup canned or boiled beans;

Preparation

- sunflower oil for greasing;
- 12 slices ham or bacon;
- 1 cup grated cheddar cheese;
- 12 large eggs;

Creamy Lemon Chicken

Ingredients
- 1 tablespoon of olive oil;
- 1 tablespoon butter;
- 4 chicken breast fillets;
- salt, ground black pepper — to taste;
- 2 tablespoons chicken broth;
- 1 small onion;
- 3 garlic cloves;
- 2 tablespoons fresh thyme leaves;
- 4 red potatoes;
- ¼ cup lemon juice;
- ¼ cup heavy cream;
- 1 large lemon.
Preparation
Heat olive oil and butter in a large skillet over medium heat. Add breasts, salt and pepper. Fry the meat until a rich golden color for 7-8 minutes on each side. Then put the chicken on a plate.
Pour the chicken stock into the pan. Add chopped onion, garlic, thyme and simmer for 2 minutes. If pieces of chicken stick to the bottom of the pan during frying, carefully separate them with a wooden spatula.
Put in sliced potatoes, season with salt and pepper. Cover and simmer for 8 minutes. Pour in the lemon juice, cream and chopped lemon. Mix well and cook for 2 more minutes.
Return the chicken to the pan, pour over the sauce. Simmer over low heat for 3-5 minutes. Garnish with thyme before serving.

- ⅓ cup + 1 tablespoon olive oil;
- ¼ cup grated Parmesan;
- ¼ cup pine nuts or almonds;
- 1 garlic clove;
- salt and freshly ground black pepper to taste;
- 450 g shrimp, cleaned;
- 1 cup frozen peas;
- crushed red chili, optional.
Cooking
Cook pasta until al dente. Leave an incomplete glass of water from under the pasta, pour the rest of the liquid.
Prepare the pesto. Using a blender, blend spinach, basil and ⅓ cup olive oil until smooth. Add pine nuts (or almonds), parmesan and minced garlic. Season everything with salt and pepper.
Heat a tablespoon of oil in a skillet over medium heat. Brown the shrimp for 3-4 minutes. Add pasta, peas and sauce and mix well. Pour in ¼ cup of the water in which the pasta was cooked, and simmer a little more.
Sprinkle with grated parmesan and, if desired, chili before serving.

- 300–400 g any dumplings;
- 200 g broccoli florets;
- 2 sweet peppers;
- 1 carrot;
- 2 garlic cloves;
- 1 cm ginger root;
- 1 teaspoon sesame oil;
- 2 tablespoons sriracha sauce;
- 2 tablespoons soy sauce;
- 1 tablespoon honey;
- 1 tablespoon rice vinegar;
- 1 bunch green onions;
- roasted sesame seeds.
Preparation
Heat a tablespoon of vegetable oil in a large skillet over medium heat. Arrange dumplings in one layer. Fry on both sides until golden brown.
Add water to the pan, covering ⅓ of the dumplings, and simmer covered for 5-8 minutes.
Place a clean skillet over medium heat and heat 1 tablespoon vegetable oil. Fry the broccoli, bell pepper pieces, and julienned carrots for 8-10 minutes until crispy. Add minced garlic and ginger and cook for 1 more minute.
Pour in sesame oil, sriracha and soy sauces, honey and rice vinegar. Bring to a boil and let the sauce thicken slightly. Add dumplings and mix well with vegetables.
Before serving, garnish the dish with green onions and roasted sesame seeds.

Ingredients
- 1 tablespoon olive oil;
- 1 medium onion;
- 450 g ground beef;
- ½ cup ketchup;
- 2 garlic cloves;
- ⅓ cup brown sugar;
- 2 tablespoons mustard;
- 1 tablespoon chili powder;
- salt, ground black pepper — to taste;
- 4 tablespoons butter;
- 8 slices sandwich bread;
- 2 cups grated cheddar.
Preparation
Heat the olive oil in a large skillet over medium heat. Fry the chopped onion until soft. Add ground beef and brown it. Drain the fat.
Add the ketchup, minced garlic, brown sugar, mustard and chili powder to the pan. Salt and pepper to taste and simmer over low heat for 5 minutes. Put the finished mass on a plate.
Butter each slice of bread on one side. Put the first one on a wiped pan with oil down. Top with a tablespoon of ground beef, cheddar and another slice of bread, buttered side up.
Toast the sandwich on both sides over medium heat until the bread is golden and the cheese is melted.
Do the same for the rest of the ingredients. You will get four delicious sandwiches.

- 100 g pine nuts;
- 1 lemon;

- 300 g feta;

- 400 g baby spinach;
- 270 g phyllo dough;

Preparation
Toast the pine nuts over medium heat until golden, 1-2 minutes. Finely grate the lemon zest, drizzle with a little oil, mix well with the nuts.
Crack eggs into a large bowl, add chopped feta and grated cheddar. Season with ground pepper and oregano.
Heat butter and olive oil in a skillet over medium heat. Add half the spinach and stir until it wilts. Add the rest of the greens and repeat the process.
Spread 4 sheets of filo pastry with a slight overlap on a half-meter piece of parchment greased with olive oil. Lubricate them with a little oil. Knead a little and smooth so that they almost cover the paper. Sprinkle with salt, black and cayenne pepper. Lay out 3 layers in this way.
Stir stewed spinach with half grated nutmeg, eggs and cheese.

- 350 g capellini or spaghetti;
- olive oil;
- 2 cups broccoli florets;
- 450 g yellow and red cherry tomatoes;
- 250 g small mushrooms;
- 420 g canned artichokes;
- 2 teaspoons garlic powder;
- salt, ground black pepper — to taste;
- ¾ cup grated parmesan;
- fresh basil.
Cooking
Preheat the oven to 200 °C. Boil pasta until al dente. Pour the pasta water into a glass.
Spray a baking sheet with olive oil, place broccoli, tomatoes, mushrooms. Remove the artichokes from the brine, dry slightly and add to the rest of the ingredients.
Season everything with ground garlic, salt and pepper and place in the oven for 15-20 minutes. In the middle of cooking, the contents of the pan will need to be mixed.
Transfer the vegetables to the pot with the pasta, add the parmesan and ½ cup pasta water. Place over low heat and stir vigorously until the sauce forms. Pour in some more water if necessary.

15. Pork chops with garlic, rosemary and Brussels sprouts

Ingredients
- 450 g Brussels sprouts;
- a little olive oil;

- 4 boneless pork chops, 2.5 cm thick;
- 4 garlic cloves;
- 1 cup chicken broth;
- ¼ cup cream;
- 1 teaspoon chopped fresh rosemary;
- 3 tablespoons butter.
Cooking
Preheat the oven to 210 °C. Cut the Brussels sprouts in half and place the slices on a baking sheet greased with olive oil. Season with salt and black pepper. Bake for 25-30 minutes.
Place a cast iron skillet over medium heat and add 1 tablespoon of olive oil. Pat the pork chops dry with paper towels, season with salt and pepper and fry for 2 minutes on each side. Wrap each piece in foil and place on a plate.
Sauté minced garlic in a pan until soft. Season with 1 teaspoon salt and ½ teaspoon black pepper. Add stock and cream and simmer for 5-10 minutes. Then sprinkle with rosemary and simmer for 1 more minute.
Turn off the heat and stir in the butter. Return the pork chops to the skillet and pour over the sauce. Keep them covered until warmed up.
Serve the chops with cabbage and sauce.
